Yom Kippur is a Jewish holiday and, what better way to honor the holiday but through a homemade cookie. There are great ways to add to the festive meal and, they make great gifts as well. One popular Yom Kippur cookie recipe is the Sfratti cookie
To begin creating the homemade Sfratti cookie one needs to assemble the following ingredients first; 3 C unbleached flour, 1 C sugar, ¼ tsp. kosher salt, 2/3 C sweet white wine, 1/3 C oil or melted butter. For the filling portion of these cookies one will need; 1 C honey, 1 tsp. cinnamon, ¼ tsp. ground cloves, ¼ tsp. pepper, 1 orange zested, and 1 lb. walnuts that have been finely chopped.
To begin making these homemade cookies take a large mixing bowl and add the flour and make a well in the center. Take and place the sugar and salt into the well and add the wine and oil gradually while mixing with a fork until the dough is smooth. Take and empty the dough onto a floured surface and knead for 5 minutes. Take and return the dough to the bowl, cover, and place into the refrigerator.
While the homemade cookie dough is chilling begin to make the filling by bringing the honey to a boil cook for 2 minutes without stirring. Then, take and add the spices, orange zest, and nuts and allow to cook for another 5 minutes being sure to stir constantly. Take and remove the pan from heat and continue to stir until the mix is cool enough to handle. Divide the mix into 6 equal portions and roll each of them into a thin log that is about a foot long and set aside.
Next, take the homemade cookie batter out of the refrigerator and divide it into 6 equal portions as well. By using a rolling pin take and roll each portion until it forms a 4x14 strip. Take and place one of the honey longs at the edge of the dough and fold the sides of the ends of the log. Take and wrap the dough completely around the filling and place onto a sheet pan seam side down. Bake in a preheated 375 degree oven for 20 minutes. Remove from oven and allow to cool for 5 minutes before removing from pan. Once cool cut into 1 inch slices before serving.
These homemade cookies will keep for several weeks without the need to refrigerate if they are wrapped in foil. While the cookies are baking you can help your child color some great coloring sheets as well.
