Poker Cake Ideas
During a poker themed party, a cake is a wonderful addition and should be something that is different, yet complimenting to the theme. Baking a fruit filled cake will do just that.
Cake Ingredients:
3 cups sifted flour
1 tsp baking soda
1 cup chopped pecans
3/4 cup canola oil
1-1/2 tsp vanilla
2 cups sugar
2 cups mashed, ripe bananas
1 (8 oz can) crushed pineapple in juice
1 tsp ground cinnamon
3 eggs, beaten
1/2 tsp salt
Frosting Ingredients:
1/2 cup (4 oz) light cream cheese
2 cups powdered sugar
1/3 cup finely chopped pecans
3 tbsp. unsalted butter, softened
1/2 tsp. vanilla
Directions:
Preheat oven to 350 degrees. Spray a 13 x 9 inch baking pan with cooking spray and lightly sprinkle with flour.
Whisk together sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. With a gentle stirring movement add in the eggs, bananas, 1 cup of pecans, pineapple, oil and 1 ½ teaspoons vanilla until blended together. Spread it out in the baking pan. Bake for about 40-45 minutes and then let cool completely.
For the frosting, beat cream and butter in a large bowl for about 3 minutes. Beat in the ½ teaspoon of vanilla and the powdered sugar until blended. Finally, blend in the 1/3 cup pecans and spread over the cake.
