Happy Face Pancakes

My daughter and her friends had this idea that I prepare them happy face pancakes and I had no clue had to start till this lovely recipe came in my life and everyone seems happier now the girls are here every morning on weekends, they love them its fantastic Ingredients:

2 cups flour
3 tsp baking powder
1/2 tsp salt (very important)
1/4 cup sugar
2 eggs (or equivalent egg beaters)
2 tblsp oil
1 cup milk

Instructions:

Sift (I never do) dry ingredients in bowl and stir in liquid ingredients with wire whisk or spoon until mixed. Do not beat. Rub griddle or fry pan with oil. Heat until water dropped from your hand bounces around. Drop about 1/2 ladel/1 large mixing spoon for each pancake. Cook until bubbled all over the top and brown on bottom. Flip, cook until brown on other side. Keep you griddle very hot at all times.

For this mood lifting food for the happy hippies party you’ll need the following items: 2 cup Chocolate wafer crumbs, ½ cup melted Margarine, 2 Egg whites, 2 cup Powdered sugar, 8 ounce Cream cheese, 21 ounce Blueberry pie filling, 1 cup chopped Pecans, 1½ cup Whipping cream, 3 tablespoon Sugar, ½ teaspoon Vanilla, ½ cup Chocolate chips, and 2 tablespoon Milk

You’ll have to put this dessert out at your happy face party. It’s bound to put smiles on everyone’s faces. Begin by combining cookie crumbs and margarine in a bowl. Stir the mixture well and press into the bottom of an ungreased square pan. Bake this crust for 10 minutes in the oven at 350 degrees. Meanwhile, beat the egg whites until foamy. Slowly mix in powdered sugar while beating eggs until the two are well blended. Next, mix in the cream cheese and beat mixture until smooth.

Remove pan from oven and spread the cream cheese mixture over the cookie crust. Top this with the blueberry pie filling and sprinkle with ¾ cups of pecans. Next beat the whipping cream with a blender at high speed until foamy. Add sugar and vanilla. Beat until soft peaks form. Spread this over the pie filling.

Melt chocolate chips and milk in a small saucepan. Cook over low heat until the chocolate melts. Stir constantly. Drizzle chocolate sauce over whipped cream. Sprinkle with remaining pecans. Place in fridge and chill for several hours. Slice and serve.

This very decadent and rich blueberry and chocolate dish is bound to make your guests happy at that happy face party. By just adding even one simple food item to the menu will help create a complete Happy Face theme party feeling.
