Disco Crab Rangoon
On your next Disco party you conduct or are invited to make this Disco Crab Rangoon and see the beauty of its flavor. I had some at Paul's disco party and I really liked it and so did everyone else.
1 or 2 packages (8 ounces) Neufchatel cheese, softened (or cream cheese) {amount based on how "cheesy" you want them} 1 can (6 ounces) crab meat, drained and flaked 2 green onions including tops, thinly sliced 1 clove garlic, minced 2 teaspoons Worcestershire sauce 1/2 teaspoon lite soy sauce 1 package (48 count) won ton skins vegetable spray coating In medium bowl, combine all ingredients except won ton skins and spray coating; mix until well blended. (To prevent won ton skins from drying out, prepare one or two rangoon at a time.) Place 1 teaspoon filling in center of each won ton skin. Moisten edges with water; fold in half to form triangle, pressing edges to seal. Pull bottom corners down and overlap slightly; moisten one corner and press to seal. Lightly spray baking sheet with vegetable coating. Arrange rangoon on sheet and lightly spray to coat. Bake in 425 degree oven for 12 to 15 minutes, or until golden brown. Serve hot with sweet-sour sauce or mustard sauce. Makes 48 appetizers. NOTE: Rangoon can also be fried in oil. Spicy Phyllo Cups
6 sheets phyllo pastry
1 T olive oil
1 onion, finely chopped
1/4 cup pine nuts
2 cloves of garlic, crushed
1 t ground cumin
1 t ground cardamom
1/8 t cayenne pepper
1/4 t ground cinnamon
1/4 pound mushrooms, chopped
1/3 cup raisins, chopped
1 T olive oil
1/2 pound rump steak, chopped (I used tenderloin)

Stack three sheets of phyllo dough on a work surface. For cups, use a three inch round tart pan or mold to cut out circles, and then place the circles in 2 1/4"
tart pans. For boats, use a 4 1/2 x 2" boat-shaped tart mold as a guide and place the phyllo into 3 1/2 x 1 1/2" boat-shaped molds. Cut out approximately 30
cups or boats.
Bake at 425 for 6-8 minutes. They should be golden brown. Remove carefully from the molds and cool on a wire rack.
Heat 1 T olive oil in a frying pan. Cook onion over medium-low heat until soft but not browned (5-6 minutes). Add the pine nuts the garlic, and the cumin, cardamom, cayenne, and cinammon. Cook 2-3 minutes. Add mushrooms and cook until soft. Add raisins. Transfer to a plate.
Heat 1 T olive oil in the frying pan. Stir-fry the steak until it changes color. Add the mushroom mixture and combine. Season with pepper, and salt if
desired. Spoon filling into cups or boats. Sprinkle with cut chives. Serve warm.

| TRIVIA ON FAVORITE SINGERS: For this game, you would need to have questions at hand for different legendary singers so that a lot of your guests have the information on them. This would be an open Trivia competition in which you are going to be asking different questions from your guests and then the ones who know the answer to the question are going to raise their hands and for every correct answer they are going to get a prize. It is said that all that is old will be new again. Fashions fade and reappear cyclically and so too, it seems, does pop culture. Disco, that era that many prefer to forget is back and it’s time to party again. Disco parties are a great way to get friends and family together and have fun dancing and singing the night away. However all that hustling and electric sliding can work up an appetite bigger than John Travolta’s hairdo. When that happens, this disco themed menu is sure to satisfy.
Begin the disco dance party with a classy cocktail bar. Have a variety of martinis ready to be shaken or stirred. Also have a special martini just for this party. There are several recipes available on the internet and you can rename them to fit the party’s seventies theme. Perhaps add some hot cinnamon schnapps to create Saturday Night Fever or add Goldschlager, with its real gold flakes to create the sparkly Studio 54.
The appetizer of cheese fondue with crusty bread and apples is a great item for a disco party, as guests can grab and dance at the same time. Making cheddar cheese and beer fondue is simple using this recipe. Gather these ingredients: 1 pound sharp cheddar cheese, shredded, 1 tablespoon flour, 1 1/2 teaspoon dry mustard, a dash of cayenne (or add a dash of hot sauce to the melted mixture), 3/4 cup beer and 2 teaspoon Worcestershire sauce. In a bowl, combine cheese, flour, mustard and ground cayenne; mix to blend well. In a fondue pot, combine beer and Worcestershire sauce. Set temperature at 375° and heat until bubbling. Gradually add cheese mixture and stir constantly until cheese melts and mixture is smooth, about 5 minutes. Reduce temperature to 200° and serve.
