Homemade brunch cookies will wow your guests. And what better ingredient could be used other than oatmeal? Try these oatmeal macaroons at your next brunch party, and your guests will hound you for the recipe.
To make your homemade brunch cookies, you will need one cup of sugar, one tablespoon of melted shortening, 2 eggs separated with the egg whites beaten, ¾ of a teaspoon of salt, 2 ½ cups of rolled oats, 2 teaspoons of baking powder, and one teaspoon of vanilla extract. Mix the sugar with the shortening and cream it together. Then add the two egg yolks only, the salt, and the rolled oats. Add in the baking powder, beaten egg whites, and the vanilla. Mix everything thoroughly. The consistency should be firm.
To bake your homemade brunch cookies, drop them from a teaspoon onto a greased cookie sheet. You could also use parchment paper, if you don’t want to grease the sheet, and your cookies won’t stick. Allow ½ teaspoon for each oatmeal macaroon, and allow some space for spreading. Bake them for about 10 minutes in a moderate oven of 350 degrees. You should get about 60 cookies out of this recipe, and your guests will want more.
For a variation, or a second recipe for homemade brunch cookies, use 3 egg whites and no yolks, 10 drops of almond extract instead of vanilla, and ½ pound of finely chopped almonds instead of rolled oats. This will create almond macaroons, and your guests will love these just as well. |
